That´s correct.
Current factor 0,7 / 700 x 656 = 0,656
Basically if you start with defaults it´s 0,001 x the read values. As a rule of thumb: if the read value is lower than 700 you need to decrease the factor, if it´s higher then increase the factor.

I'm pretty sure that the LOG signals for the accelerometers are in meters/second/second, not g. So, LOG_IMU_ACCZ should be -9.8 if the board is level (and the X and Y should be 0.0).
