Their has been discussions about protecting the board with a conformal coating. This may in fact be a good idea for very high humidity and especially operations in a salt water environment.
I'm not sure I'd use Plasticdip but don't have a reason other than the fact you would have to cover a lot of the board. The sensors are analog so all the traces between the sensors, any opamps involved, and the microprocessor would all have to be covered. If moisture would get under it then you'd have a bag of worms.
If you put the board in a zip lock bag, with the microsd card and the power connector sticking out and then freeze it. When it comes out of the freezer moisture will cover the bag but the board will be fine and give good results. Zip the bag closed and don't open it up until the static is over.
